WHere is a home-style take on a cocktail found on a new cocktail list. This is a party-sized pre-mixed which is loaded with the flavours associated with Christmas time, making it excellent for a celebration. Reserve the remaining citrus syrup you can use for brunch beverages, desserts, or to make additional servings of bikinis.

The Bikini Cocktail

Makes enough for 10 people

For the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

For the Syrup: Place every items into a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the stove and leave to cool completely. Decant into a sterilised bottle, cap it and store in the fridge, it will last for around one month.

To make Cocktail Base: Mix the specified liquid ingredients in a big jug, allow it to infuse for one hour, then strain best through cheesecloth, making it fully clarified.

For serving: Add 85ml from the premix into a mixing glass containing ice, and stir lightly for one minute to cool it down. Strain into a frosted cocktail glass or similar, decorate with a few cranberries and finish using a brief mist of the essential oil over the top.
